Nice little recipe for you to try at Home;)
“Spicy Chicken wrapped in Pancetta”
4 free-range skinless chicken breasts
8-12 slices of pancetta (or parma ham)
250g cherry tomatoes
½ to ¾ of a bottle of Estelle’s ‘Jacks on Fire’ sauce
3 tablespoons of olive oil
Pinch of salt and pepper
Preheat your oven to 180c (or 170c fan oven). Wrap each chicken up in 3-4 slices of pancetta or parma ham, tucking the ends underneath the breast, this will flavour the chicken whilst protecting it too.
Lay the chicken in a large casserole dish. Place the cherry tomatoes around the chicken and drizzle the olive oil over the tomatoes. Season lightly with salt and pepper. Drizzle your chosen amount of ‘Jacks on Fire’ sauce (depending on how spicy you like it!) all over the chicken and tomatoes.
Cook in the centre of your oven for 25-35 minutes. Serve with baby Welsh potatoes and green beans (or plan boiled rice if time is limited).
